250g unsalted butter
1/4 cup castor sugar
1/4 cup crushed almonds (optional)
3 cups of gluten free self raising flour (watch video to get right consistency)
Gluten free icing sugar to cover cookies
1/ Preheat oven to 160C
2/ Using a hand mixer, cream sugar and butter together in a large bowl. Add egg and crushed almonds (optional) mix in well.
3/ Add flour one cup at a time, and mix by hand. You want to achieve a crumbly texture but a dough that's still able to be patt down
4/ patt down and use a cookie cutter to cut your cookie shapes out. Carefully place on a cookie tray. Bake for 10 min.
5. After they've COMPLETELY cooled down, coat them in icing sugar, but be gentle as these cookies are extremely delicate
