A Delicious Christmas Wreath You Say?

This is heaven in your mouth!

 

Ingredients

6 egg whites

375g castor sugar

3tsp corn flour

1.5tsp white vinegar

1tsp vanilla extract

 

400ml thickened cream

berries of your choice

**and if you must, passionfruit pulp

 

Method

 

1/ Preheat oven on 100C

 

2/ In a clean mixing bowl or the bowl of a stand mixer, bring your egg whites to soft peak, then add half your sifted icing icing sugar and corn flour. mix on low, then add the rest until well combined. (stop and scrape, if you need to...)

 

3/ On low speed, add half of the sugar and mix on low, then add the rest until it's all mixed in. Put the speed up on high and mix for 10 min. Stop, scrape and add vanilla extract, corn flour and white vinegar. Mix on high for a further 2 min until well combined.

 

3/ To prepare baking tray, line with baking paper. Using a dinner plate draw a circle, and turn the paper around so the ink side is facing down.

 

4/ Using a large spoon, place spoonfulls of the meringue on the paper using your circle as a guide. You might have to go a second story/layer of meringue on the bottom base.

 

5/ Bake for 1hr and 10min. DO NOT at any stage open the oven door! Not even a little! Once your hour is up leave it in the oven to cool COMPLETELY with the door shut.

 

6/ To whip your ceeam to soft/medium peaks, whip it on high for about 5-6 min. You want it soft enough that it has some thickness to it, but not runny. Top with you fave berries, and you're ready to eat pure heaven! :0)
