Ding Fries Are Done!

Ingredients

4 egg whites

250g icing sugar

2tsp corn flour

A couple drops of gel food colouring (not liquid)

Peppermint escense (optional)

 

SPRINKLES:

white chocolate for melting

Sprinkles of your choice

desicated unsweetened coconut to sprinkle

 

Method

1/ In a clean mixing bowl or the bowl of a stand mixer, bring your egg whites to soft peak, then add half your sifted icing icing sugar and corn flour. mix on low, then add the rest until well combined. (stop and scrape, if you need to...)

 

2/ Mix on highest speed for 6-8 min then add your food gel colouring , and mix on high for a further 2 min until well combined (NO STREAKS! Scrape that bowl down!)

 

3/ Pipe your meringues on a baking tray lined with baking paper. Bake on 100C for 90 min DO NOT OPEN THE OVEN DOOR, those babies will sink

 

4/ Drizzle and sprinkle that shiz.

 

**Melt choc melts in the microwave for 10 seconds at a time
