Rainbow Love Cookies

1 batch of sugar cookies
1 batch of royal icing
Food gel colours of the rainbow. Green, Yellow, Orange, Red, Purple, Blue & White (can use liquid if you don’t have gel, but keep in mind it may thin out the icing)
Mini Marshmallows or Marshmallow sprinkles (I used the ‘Kraft’ Jet Puffed Mallow Bits)
To make these cookies you’ll need to make a batch of my Sugar Cookies & Royal Icing.
1/ Roll out your dough to about ½ cm (0.2 inches) in thickness Cut out your heart cookies, take away the excess and pop in the fridge for 20 min.
2/ Preheat your oven to 180C (374F)
3/ Pop your cookies in the oven and bake for 10 min or until they turn golden around the edges. Let them cool down completely.
4/ While your cookies are baking and cooling separate your frosting into 7 different mixing bowls and colour six of them in the colours of the rainbow, leaving one white for the clouds. Transfer all the frosting to a zip lock bag or a piping bag and snip off a little bit at the end so the hole is about half the size of a pea.
5/ To decorate the cookies start off with the blue icing. Create a perimeter around the edge of the heart about 2mm away from the edge of the cookie. Fill in with blue icing. Carefully shake the cookie around to get the icing smooth. Once you’ve got them all done let them dry for about 20-30.
6/ To finish off the cookies pipe your rainbow on. Once you’ve got each colour on (as demonstrated in the video) pipe a little bit of white down the bottom and carefully stick on your marshmallow bits. Let them dry for about half a day.
